Eggless cookie recipe to make with kids for any occasion

Who doesn’t love making cookies? Well, for our family, making cookies on various occasions, or with no reason at all, is a cherished activity! I have bought the 101 Wilton Cookie Cutter Set and there are more than enough cookie cutters for any occasion! But since I often think about little fingers and rare eggs, I tried to find a simple, eggless cookie recipe and it became our favorite one! It doesn’t spread and the cookies are perfect for icing and decorating! And it’s great to make our Christmas cookies or our edible Christmas gift, like our full of treats Santa’s Sleigh Cookie (learn how to make them!!)

Eggless cookie recipe ingredients:

–          370 g flour

–          165 g sugar which has been through the food processor or blender

–          ¼ teaspoon salt

–          2 teaspoons vanilla extract

–          225 g butter, cold

–          30 g cream cheese

How to make eggless cookies

  • In a large bowl, mix the first four ingredients.
  • Now add little by little the butter and knead with your hand. It will be a crumbled mix first. When you have added all the butter, mix in the cream cheese.
  • Part the dough into two and wrap in clear wrap foil.
  • Chill the dough for about half an hour.
  • Roll the dough out as thin or thick as you like and cut out your cookies with your favorite cookie cutters. Mine are snowflakes, Christmas trees, and stars!
  • Put the cookies on a baking paper-lined a baking tray.
  • Bake in a preheated oven for about 180 degrees C for about 8-10 minutes, until their light brown.
  • Let them cool completely before decorating the cookies or assembling the sleigh.

Συνταγή για χριστουγεννιάτικα μπισκότα και ιδέα για δωράκι: Μπισκοτένια έλκηθρα του Άη Βασίλη

Πολλές φορές, όταν υπάρχει χρόνος, προσπαθώ να ετοιμάσω κάτι ιδιαίτερο για δωράκι για τα παιδιά των φίλων. Φέτος, ετοίμασα λοιπόν μερικά έλκηθρα από μπισκότα! Έχουν τον κόπο τους, αλλά σε ανταμοίβουν. Τα παιδιά μπορούν να βοηθήσουν στην διακόσμηση και το γέμισμα των ελκήθρων και φυσικά στο φάγωμα όσον περισσεύουν!!!

Ένα έλκηθρο έτοιμο για απογείωση!

Θα χρειαστείτε:

  1. Την αγαπημένη σας συνταγή για μπισκότα που κρατάνε το σχήμα τους, ή χρησιμοποιήστε την δική μου που σας δίνω παρακάτω
  2. Κουπ πατ για έλκηθρο ή κάποιο πρότυπο-οδηγό, όπως έκανα εγώ. Στο τέλος του άρθρου υπάρχει ο σύνδεσμος για την πηγή που βρήκα τον δικό μου οδηγό.
  3. Την αγαπημένη σας συνταγή για icing, η χρησιμοποιήστε την δική μου που σας δίνω παρακάτω
  4. Γλιφιντζούρια χριστουγεννιάτικα μπαστουνάκια (δύο για κάθε έλκηθρο)
  5. Ζαχαρωτά για την διακόσμηση
  6. Χρώματα ζαχαροπλαστικής (προαιρετικά)
  7. Μικρές λιχουδιές για να μπουν στα έλκηθρα

Συνταγή για μπισκότα χωρίς αυγά:

Χρησιμοποίησα την αγαπημένη μου συνταγή για μπισκότα, η οποία είναι χωρίς αυγά:

  • 370 g αλεύρι
  • 170 g ζάχαρη που την έχουμε περάσει από τον επεξεργαστή τροφίμων ή μπλέντερ
  • ¼ κουταλάκι του γλυκού αλάτι
  • 2 κουταλάκια του γλυκού υγρό εκχύλισμα βανίλιας
  • 230 g βούτυρο, κρύο
  • 30 g τυρί κρέμα

Σε ένα μεγάλο μπολ, ανακατεύουμε τα πρώτα τέσσερα συστατικά.

Έπειτα, προσθέτουμε λίγο λίγο το βούτυρο και ζυμώνουμε με τα χέρια. Στην αρχή θα έχει τη μορφή τρίμματος, αλλά όσο περισσότερο βούτυρο προσθέτουμε και ζυμώνουμε, τόσο θα παίρνει τη μορφή ζύμης. Όταν έχουμε βάλει όλο το βούτυρο, προσθέτουμε και το τυρί κρέμα και ζυμώνουμε.

Μοιράζουμε στα δύο τη ζύμη και τα τυλίγουμε σε μεμβράνη. Τα τοποθετούμε στην κατάψυξη για μισή ώρα.

Βγάζουμε τη ζύμη από την κατάψυξη και την απλώνουμε με πλάστη. Το πάχος του φύλλου που θα απλώσουμε εξαρτάται από εμάς, συνήθως όμως ένα πάχος 0,5 εκ. είναι καλό για μπισκότα. Κόβουμε τα μπισκότα μας με τα κουπ πατ ή χρησιμοποιώντας τον οδηγό σας (που μπορείτε να βρείτε εδώ από το Lila Loa, όπου μπορείτε να βρείτε και βήμα βήμα οδηγίες για τα δικά τους πανέμορφα έλκηθρα, αν έχετε το ταλέντο!)

Βάλτε τα μπισκότα σε ένα ταψί όπου έχετε στρώσει αντικολλητικό χαρτί ψησίματος. Ψήνετε σε προθερμασμένο φούρνο στους 180 βαυμούς Κελσίου για περίπου 8 έως 10 λεπτά, ανάλογα με το πάχος τους, μέχρι να αποκτήσουν ανοιχτό καφέ χρώμα. Αφήνουμε να κρυώσουν τελείως.

Μόλις κρυώσουν εντελώς, μπορούμε να τα διασκοσμήσουμε ή να φτιάξουμε το έλκηθρό μας. Τους αφήστε να δροσίσουν εντελώς πρίν διακοσμούν τα μπισκότα ή τη συναρμολόγηση του έλκηθρου.

Τώρα ήρθε η σειρά για το icing, το υλικό που θα χρησιμοποιήσουμε για να κολλήσουμε τα κομμάτια του ελκήθρου μας δηλαδή. Μπορούμε την ίδια αυτή συνταγή να την χρησιμοποιήσουμε και για να διακοσμήσουμε τα μπισκότα μας. Μπορείτε βεβαίως να χρησιμοποιήσετε κάποια έτοιμη αγοραστή ή κάποια άλλη συνταγή, καθώς η δική μου είναι λίγο ρευστή και έτσι δυσκολεύει αρκετά την συναρμολόγηση. Εγώ την προτιμώ όμως, καθώς δεν περιέχει ωμό αυγό, όπως συνήθως περιέχουν άλλες συνταγές για icing.

Η αγαπημένη μου συνταγή για icing:

  • 5-6 κουταλιές της σούπας μαρέγκες σε σκόνη (αγοράζω μαρέγκες από το ζαχαροπλαστείο ή φτιάχνω δικές μου, και τις κάνω σκόνη στο μπλέντερ)
  • 250 g ζάχαρη άχνη
  • περίπου μισό φλιτζάνι νερό (πιθανόν να μην το χρησιμοποιήσουμε όλο)

Χρησιμοποιήστε το μίξερ σας για να ανακατέψετε όλα τα συστατικά εκτός από το νερό. Μετά με προσοχή και λίγο λίγο, προσθέστε το νερό μέχρι να γίνει μια παχύρευστη κρέμα. Προσοχή, γιατί ακόμα και λίγες σταγόνες νερό μπορούν να κάνουν την κρέμα πολύ ρευστή και άρα άχρηστη ως κόλλα. Αν συμβεί αυτό, θα πρέπει να προσθέσετε και άλλη μαρέγκα σε σκόνη ή άχνη ζάχαρη.

Βήματα για να φτιάξουμε τα χριστουγεννιάτικα μπισκοτένια έλκηθρα του Άγιου Βασίλη:

Όπως προείπαμε, αφήνουμε τα κομμάτια μας να κρυώσουν εντελώς

Όλα έτοιμα για να ξεκινήσει η συναρμολόγηση του ελκήθρου

Βήμα 2:

Βάλτε λίγο icing στο κάτω μέρος των πλευρικών κομματιών και κολλήστε τα στο κομμάτι της βάσης του ελκήθρου. Κρατήστε τα σταθερά για όσο χρονικό διάστημα απαιτείται μέχρι να κολλήσουν καλά στη θέση τους. Έπειτα, αφήστε τα να στεγνώσουν καλά για τουλάχιστον μισή ώρα.

Αφήστε το να στεγνώσει μέχρι όλα να είναι μένουν στη θέση τους

Βήμα 3:

Βάλτε λίγο icing στις τρεις πλευρές των τελευταίων κομματιών και σύρτε τα προσεκτικά στο μπροστινό και το πίσω μέρος του ελκήθρου. Θα πρέπει να κολληθούν σε μικρή γωνία έτσι ‘ωστε να υπάρχει περισσότερος χώρος για τα γλυκίσματα. ΤΚρατήστε τα στη θέση τους για μερικά λεπτά και προσθέστε icing όπου απαιτείται για να κλείσουν τυχόν κενά. Αφού βεβαιωθείτε ότι μένουν όλα στη θέση τους, αφήστε τα να στεγνώσουν για τουλάχιστον 1-2 ώρες ή και περισσότερο.

Συναρμολογήστε το πίσω και το μπροστινό μέρος του έλκηθρου

Βήμα 4:

Εφόσον έχει στεγνώσει καλά, γυρίστε το έλκηθρο ανάποδα και κολλήστε με icing τα δύο γλιφιντζούρια μπαστούνια , τα οποία έχετε ξετυλίξει από πριν. Αφήστε τα να στεγνώσουν κάπως, και γυρίστε τα από την σωστή πλευρά. Αφήστε τα και πάλι να στεγνώσουν, ίσως και για 1-2 ώρες ή και περισσότερο. Μια μικρή συμβουλή: για την καλύτερη μεταφορά του ελκήθρου και για να μην διαλυθεί, ετοιμάστε μερικές βάσεις από χαρτόνι για κάθε έλκηθρο και τοποθετήστε τα εκεί επάνω.

Βήμα 5:

Έφτασε η ώρα για το πιο διασκεδαστικό κομμάτι! Διακοσμήστε τα έλκηθρά σας με όποιο τρόπο θέλετε και μπορείτε. Αφήστε το να στεγνώσει και τοποθετήστε μερικά σοκολατάκια μέσα στο έλκηθρο.

Αν θέλετε, τυλίξτε το σε σελοφάν για να γίνει πιο εντυπωσιακό και το δώρο σας είναι έτοιμοο!

Edible Christmas Gift Idea: Santa’s Sleigh Cookies

There is still time to make this treat like a nice gift for any child! This year, I made some cookie sleighs! You can involve your little ones like I did, by giving them some cookie dough to make the cookies with cookie cutters or let them help with the festive decoration or fill the sleighs with goodies! I got this edible Christmas gift idea from the wonderful Lilaloa blog, where you can find their sleigh cookie templates and sleigh cookie cutters!

You will need:

  1. Your favorite sugar cookie or gingerbread recipe that doesn’t spread, or try my favorite eggless cookie recipe
  2. Sleigh cookie cutters or cookie sleigh template (you will need five pieces: two identical sleigh sides and two rectangular identical pieces for the back, and the front and one rectangular piece that is slightly bigger than the two others for the bottom).
  3. Your favorite icing recipe, or try my favorite eggless icing recipe
  4. Candy canes
  5. Decorations such as colorful sprinkles
  6. Food coloring (optional)
  7. Little treats to put inside the sleighs

Cut out all needed cookie pieces and bake them according to the recipe directions.

Steps to assemble the edible Christmas gift idea cookie Santa sleighs:

Step 1: Let your pieces cool down completely

Step 2: Put some icing on the bottom of the sides pieces and glue them to the bottom piece. Hold for as long as necessary until they stay in place. Let it dry for at least half an hour.

Let it dry until everything is secure

Step 3: Put some glue on the three sides of the last pieces and slide them to the front and the back of the sleigh. They should be glued with a slight angle so there will be more space for the candy. Keep them in place for 1-2 minutes and add icing if needed to close any gaps. Let it dry for at least 1 hour.

Step 4: Turn the sleigh upside down and glue on the two candy canes which you will have unwrapped before. Let it dry for half an hour and turn it on the correct side. Let it dry a little longer to be sure. I recommend putting the sleigh on a piece of cardboard for secure transportation.

Step 5: Decorate in any way you want. Let it dry and put in some candy.

Eggless icing recipe for decorating cookies with your kids

Making cookies and decorating them is one of our favorite family activities! My kids love preparing and cutting out the cookies! More than that, they love decorating them! And of course, what they love the most, is eating them!!! So, I try to keep the cookies healthy, and since I have my concerns about rare eggs and kids, I found an eggless cookie recipe (get the eggless cookie recipe here), as well as this eggless icing recipe I am sharing with you now! I have to warn you though, my recipe is a little runny. I have used it to assemble some edible cookie Santa’s sleigh treats and even “gingerbread” houses using store-bought cookies, but it is not the most ideal recipe for that. Maybe using some other recipe is better for that use, but I like mine since it has no raw eggs. But for decorating cookies, it’s great!

Eggless icing recipe ingredients

–          5-6 tablespoons of meringue powder (I buy white meringues and powder them in the blender)

–          250 g confectioners sugar

–          About 1/3 a cup of water

How to make the icing

Use your stand mixer to mix all the ingredients, but add the water little by little to see how much it will take to have the perfect icing consistancy.

Thickness is crucial for using this recipe as glue, while thinner icing is better for decorating. If it gets too thin, use more meringue powder or confectioners sugar.

If you want to add some food coloring, you will need to be carefull and reduce the amount of the water!

Pour your icing into a piping bag and use a piping tip for decorating your cookies. Use the icing fairly soon after preparing it! Once you decorate your cookies, you can add sprinkles, smarties or other edible decorations!

Let the icing dry completely and keep your cookies in a cookie jar!

Kids Christmas Craft With Cardboard Paper Tubes

We have been busy the last days since Christmas is on our doorstep! One of the crafts we did was making some Christmas people out of cardboard paper tubes! Those are so versatile, I did never think about them that way.

You can use whatever tubes you can find, from paper towel rolls to toilet paper rolls everything goes. We also used some googly eyes, but you can paint the eyes on. So, you’ll need, other than the tubes and colored paper, glue and scissors and maybe some items for decoration.

When you’ve decided what you want to make, measure the paper and cut it the length of the tube. Then put some glue on the tube and wrap it with the paper. If you don’t have colored paper, just paint on some plain white paper. Or you can paint directly on the tube or even use it as it is.

The tubes can also be used to create wreaths or ornaments and some even use them as gift tags, napkin holders or treat or gift boxes; when they are beautifully crafted and decorated that is.

And finally!!! My son’s creations with a little help from me cutting the paper pieces.

Dried Citrus Christmas Decor And Ornaments

Here I am again with my dried citrus Christmas Decor ideas! I already have written about dried fruits ornaments and roses made out of citrus peels. What can I say, I just love the look of them and how easy they are to make! Did you know that you can use apples and pears as well as citrus fruits? And some people cover the slices after drying with clear craft varnish or decoupage glue, to keep them for a long time. You can use the dried fruit for making a beautiful Christmas wreath and spiced, with cinnamon or cloves, ornaments. Those dried fruits are great additions to garlands and they smell beautiful! I really suggest to dry them on the radiators now that it is winter. That way you save money from burning your oven.

Healthy Toddler Snack: Whole Wheat Apple Muffins Recipe

Sunday afternoon is increasingly becoming cake time lately. Or muffin time! Of course, always with the help of my kids. They get really excited every time, they just love to help! And what great helpers they are! I searched for an apple muffin recipe, which would be on the healthier side. After finding some recipes, I decided to go with the one from http://smittenkitchen.com/blog/2008/04/whole-wheat-apple-muffins/ , which I adapted a bit to fit my taste and the ingredients I had at home. They came out delicious; we loved every bite of them.
So, here is the recipe for about 15 muffins

Ingredients for this healthy toddler snack:

1 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ or less teaspoon salt
½ tablespoon cinnamon
1/2 cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/3 cup brown sugar
2 tablespoons of coconut oil
2 medium eggs
¼ cup milk
2 large apples, peeled, cored, and coarsely chopped
1 tablespoon dark chocolate
1 teaspoon butter

Directions:

Preheat the oven to 220o C. Line your muffin tin.
In a bowl, mix together the first six ingredients. In another bowl, cream the butter and both sugars until somewhat fluffy. Next, add the eggs and mix well. You might need to scrape the sides. Next add the dry ingredients, the milk, and the apples and combine, taking care not to over-mix the dough.
Divide the dough into the muffin cups and bake for about 10 minutes. Turn down the heat to about 200o C and bake for another 5-10 minutes, until the famous toothpick comes out clean. Take them out of the oven and let them cool for a few minutes. Then take them out of the tin and let them cool on a wire rack.
Melt the dark chocolate and combine with the butter. Scoop the chocolate into a polybag and cut off the tip. Drizzle the chocolate over the muffins and enjoy!!!

Easy Kids Craft: Penguin Finger Puppets

Materials to make some cute penguin finger puppets

So, it is quite simple to make the penguins and a lot of fun, too!!! You will need stuff that you will have probably already in your house:

  • Black cardboard or paper for the penguin’s body
  • White cardboard or paper for the eyes and belly
  • Orange cardboard or paper for the nose
  • Paper glue
  • Scissors
  • A black or other color marker for the eyes or googly eyes
  • A pencil for tracing, if you need to
  • Other colors of cardboard or paper  and yarn if you’d like to add some more details

How to make the easy kids craft penguins

  1. To get started, you’ll need to cut out of the black cardboard the penguin’s body and cut out two holes for the fingers. The shape of the penguin’s body is quite simple, you will not have any trouble with it, but if you want, first trace the shape of the body with a pencil and then cut it out Out of the white cardboard cut some oval eyes and the belly, like shown in the image. Also, cut a small triangle out of the orange cardboard.

2. Now, you can glue all elements on the penguin’s body. You can make him take on any expression you can think of.

3. Now, take the marker and draw some details on the eyes to make your penguin alive, and ready you are to begin playing with them!!!

4. You could also add some other decorations to them if you would like to. A scarf, a hat or funny hairs out of yarn, would be a funny addition, don’t you think?

Last step: Have fun!!!

Once the penguins are ready, your kids can begin their adventure!!! Think about a story, add items and scenery, and just get started. Even a cute little diy puppet theater like this one from the blog Ruffles & Rain Boots would be wonderful for this and other stories to imagine and play!

Orange Peel Rose: a Romantic Dried Fruit Decoration Idea

Orange’s peels are very versatile, as it seems! Here is another idea on how to use the peel: make an amazing orange peel rose out of them.

The kids can easily help at any stage. Just the peeling will have to be done by a grown-up. And maybe when you need to stabilize something with a toothpick, you should do that, too, if your kids are not old enough.

All the other stuff – making the oranges, arranging them, dust them with some confectioner sugar, and eating the oranges, of course (lots of vitamins and Vitamin C!) – all can be done by the kids!

How to make an orange peel rose

It is really easy. Peel the oranges carefully and then just roll them up. Ready are the orange peel roses!  When they are fresh, they are great decor for salads or other dishes, and if you let them dry, they can be used for decorating your home. By adding some essential oils or cinnamon sticks, they will make the room smell wonderful.

Roses of other fruit peels

You can use other citrus fruits as well. Then you will have a nice variety of flower sizes and colors!

I even tried to make a kiwi peel rose! It looks great when it is fresh and is ideal to use to decorate a table or dish! When it dries though, it loses its beauty.

And lastly, by cutting the peel on the one side (zick-zack or curves) and then rolling them up, you will get some beautiful flowers, even other than roses!

This one was discovered by my kids! Here in Greece, most of us have winter carpets and – not that necessary – summer carpets. When the seasons change we change the carpets accordingly! So, the time came for us to roll out our winter carpets, as annoying as it is to try to get some playdough out of it later on. We rolled the first one out, but, something – I don’t remember what – happened and we let the second one rolled up on the floor. The minute the kids saw it, the fun began! And behold, our DIY balance beam hack for toddlers using carpets came to life!

Up and down, back and forth, crawling, running, or balancing, they couldn’t get enough of it!!! It is kind of safe, since it has almost no height and we have it on the other carpet, so even if they should fall – which has not happened yet – it won’t be a hard fall.

Using everyday items can be so fun for kids!

It is so funny! You go out and buy all this stuff for them, only to find out that an everyday item could be so much more entertaining. And it is good for gross motor skill and balance skill development, too!!!

So, we let the carpet a few days rolled up, luckily the weather is warm enough until now. I can imagine making a whole set up with different types and lengths of carpets to challenge them even more!

If you have somewhere an old carpet, bring it into the room, tie the ends with some tape so it doesn’t roll open, and let your kids enjoy it! Not only will it provide hours of fun, but it will also teach them to use their imagination and innovation, repurposing everyday items and giving them a new role!
